HOLMES PLACE CAFÉ RECIPE: Healthy Bowl

Eat Healthy, Feel Healthy! Enjoy the healthiest and most delicious bowl with mung beans, sweet potato, buckwheat, and avocado, perfect for lunch or dinner. Packed with protein, iron, dietary fiber, and amino acids, it will provide proper nourishment and balance in your everyday diet..*

Ingredients: 

·       1 medium-sized sweet potato 

·       100 g of mung beans 

·       100 g of buckwheat 

·       1 avocado 

·       2 tablespoons of olive oil 

·       3-4 cherry tomatoes

·       2 limes

·       coriander 

·       tabasco

·       salt

·       pepper 


Preparation: 

Wash the sweet potato and cut it in half. Place it in a pan on baking paper, pour some olive oil, add salt and pepper, and bake for 30 min at 180°C. 

 

Put the mung beans in cold water, let them boil and then leave them to soften (for about 15 min). At the same time, place the buckwheat in boiling water under a medium fire for about 10 min. Then put both the buckwheat and mung beans in a bowl and add some finely cut coriander, juice and lime zest, 1 tablespoon of olive oil, and salt and pepper. 

 

Mash the avocado in a bowl using a fork and then add some finely cut coriander, lime juice, preferably tabasco, the rest of the olive oil, salt and pepper. 

 

Serve the baked sweet potato, the mung bean and buckwheat mixture, the smashed avocados and the cherry tomato halves in a dish.
